Waiting for the verdict on this dish. My initial review was postive, but my daughter will let me know her review later today. Fuji apple dices, cinnamon red hot candies and crumbled graham crackers topped with whipped cream. Hey, what’s not to like.
I left off the whipped cream as my daughter is wanting to shave some calories. However, even with canned whipped cream, you’re only adding 25 calories for 2 tablespoons.
I had some leftover strawberries and chocolate from a dish I made earlier this week. A few strawberries dipped in chocolate never hurt anyone…. ! Heck, maybe it added another 65 calories, but come on… it’s Friday and well deserved. Grab the Recipe
It was a BIG event last night. My annual Bunco Babes group hosted 120 girlies to support our local community Angel Tree program for the holidays.
It was a blast. As you can imagine, 120 women of varying ages with wine and food thrown into the mix…. well, what more can I say. We had 87 prizes to give away and I don’t think anyone left disappointed.
This was an appetizer I brought to the event and thought it worthy of sharing. It was well received and fairly simple to prepare. I purchased two angel food cakes and 3 large containers of fresh strawberries. You will need wooden skewers and melt-able chocolate which I purchased at Michael’s. I had plenty of leftover apples from the orchard that were going to go bad if not used immediately. I knew my grandkids were coming for a weekend visit and cupcakes seemed a perfect fit. Warm spiced cider and freshly baked apple cupcakes on a sunny Autumn day. What more could you ask for?
Each cupcake (with frosting) is in the neighborhood of 148 calories. The most time consuming part of this recipe is cutting the apples. I elected to use paper cups to line the cupcake pan and sprayed the paper liners with non-stick cooking spray. Those in the soaping industry are very aware of a technique used to make swirled soaps. It’s pouring dual colored soaps and then using a wooden skewer to swirl the colors. Well, that’s just what I did with this brownie cake.
