I had plenty of leftover apples from the orchard that were going to go bad if not used immediately. I knew my grandkids were coming for a weekend visit and cupcakes seemed a perfect fit. Warm spiced cider and freshly baked apple cupcakes on a sunny Autumn day. What more could you ask for?
Each cupcake (with frosting) is in the neighborhood of 148 calories. The most time consuming part of this recipe is cutting the apples. I elected to use paper cups to line the cupcake pan and sprayed the paper liners with non-stick cooking spray.
