A few days ago I posted a Coconut Chicken dish. This is a follow-up to that post. After the first few bites of the chicken, I decided it needed a dipping sauce. I scrounged around in the fridge and kitchen cupboards to see what I had on hand.
It’s amazing what you can do in a pinch. Pictured above is the Apricot Mango dipping sauce and to be quite honest, it is pretty darn good. It was a perfect match to the coconut breaded chicken. A 1/3 cup serving was in the neighborhood of 30 calories. Not bad! Grab the Recipe
