Who says you can’t eat tacos on a low-calorie diet plan? This was last night’s dinner and my daughter’s BG (Blimpy Girl) lunch today. One taco is 260 calories with all the goodies… cheese, lettuce, tomato, sour cream (low fat), taco sauce and ground sirloin (cooked, of course). Ground sirloin is much leaner than standard ground beef. The addition of a dry taco seasoning packet will add flavor to the meat.
I didn’t fry the shell in oil. Instead, I heated the flour tortilla along with the meat and cheese in the microwave for around 23 seconds; rotated plate and heated an additional 10 seconds. Don’t overheat or the shell will fall apart.
You can immediately eliminate 60 calories if you forego the flour tortilla. But, what’s a taco without a shell? Two of these at 520 calories is still a very forgiving meal. On a 1200 calorie daily meal plan, you still have 680 calories to spare. You can also make this one of your weekend splurge dishes.
With the Christmas holiday upon us, this is a perfect meal that requires little preparation. If you want, substitute the ground sirloin for chopped chicken (white meat). It will shave off some calories and still make a very tasty taco.
