Shrimp Mango SaladIngredients

  • Romaine lettuce shredded
  • 1/2 cup coleslaw mix
  • 1/2 cup diced mango
  • 1/2 cup diced cucumber
  • 1/3 cup diced red pepper
  • 1/4 cup black beans (canned/drained/rinsed)
  • 2 jumbo shrimp (cooked and chilled) per side salad
  • 2 tablespoons fat-free mayo, 1 tablespoon orange juice, 1 teaspoon rice vinegar (for dressing)

 How To

Shred romaine and top with the remaining ingredients. Toss with the mayo/orange juice/rice vinegar dressing.

Tips

1 to 1/1/4 cup of lettuce and topping is in the neighborhood of 140 calories with 2 jumbo shrimp.
