- Romaine lettuce shredded
- 1/2 cup coleslaw mix
- 1/2 cup diced mango
- 1/2 cup diced cucumber
- 1/3 cup diced red pepper
- 1/4 cup black beans (canned/drained/rinsed)
- 2 jumbo shrimp (cooked and chilled) per side salad
- 2 tablespoons fat-free mayo, 1 tablespoon orange juice, 1 teaspoon rice vinegar (for dressing)
Shred romaine and top with the remaining ingredients. Toss with the mayo/orange juice/rice vinegar dressing.
