Chicken Salad- Recipe

Chicken SaladIngredients

  • 5 ounces cooked chicken, chopped
  • 1/2 cup red seedless grapes cut in half
  • 1/2 cup chopped cucumbers
  • 1/2 cup apple, chopped
  • 1/3 cup fat-free yogurt
  • 2 1/2 tablespoons fat-free mayo
  • 1 teaspoon Splenda
  • 1/4 teaspoon lemon juice
  • Salt/pepper to taste

How To

 Cook and chop chicken pieces. Mix together the yogurt, mayo, splenda, seasonings and lemon juice in a bowl. Add chicken pieces and thoroughly coat.

Once chicken mixture is coated stir in chopped grapes, cucumbers and apples. Serve a 3/4 to 1 cup serving atop a bed of lettuce. You can also serve on a crescent roll for a sandwich.

You’re in the neighborhood of 150 calories for the salad and 250 calories if you add the crescent roll.
