Blimpy Girl Baked Eggplant Parmesan


  • 1 medium size eggplant
  • 3/4 cup panko bread crumbs
  • 1 jar marinara sauce (26 ounces)
  • 1/3 cup shaved Parmesan cheese (I buy this from Costco in a big jar)
  • 1 to 1 1/2 cup fat-free mozzarella cheese1
  • /2 teaspoon garlic powder
  • Salt and pepper to taste
  • Pinch or two of Italian Seasonings
  • 1/2 cup to 3/4 cup egg substitute

How To

Spray an 8 x 8 or 9 x 9 baking dish with non-stick cooking spray. Spread a portion of the marinara sauce in the bottom of pan and then half of eggplant slices. Add another layer of marinara sauce, then a layer of mozzarella and Parmesan cheese. Place the final layer of eggplant slices on top and layer the remaining sauce and cheeses.

Cover dish with foil and bake in oven for 30-35 minutes. Remove from oven and allow to cool slightly. Cut into serving size portions.

This recipe will easily feed 4-6 people. You can add a side of pasta or mixed green salad if you wish. It won’t bump up the calories much and gives added fullness to the dish.
