Spray an 8 x 8 or 9 x 9 baking dish with non-stick cooking spray. Spread a portion of the marinara sauce in the bottom of pan and then half of eggplant slices. Add another layer of marinara sauce, then a layer of mozzarella and Parmesan cheese. Place the final layer of eggplant slices on top and layer the remaining sauce and cheeses.
Cover dish with foil and bake in 350 degree oven for one hour. Remove from oven and allow to cool slightly. Cut into serving size portions. Each serving is in the neighborhood of 168 calories.
This recipe will easily feed 4-6 people. You can add a side of pasta or mixed green salad if you wish. It won’t bump up the calories much and gives added fullness to the dish.
